People today in Europe are more adventurous regarding exotic foods. They are more open today to trying a wider variety of foods than they were 20 to 30 years ago.

This book sets out to give European people an insight into the riches of far eastern food. Some people in the western world are afraid of Indian/ south Asian food. This fear is unfounded. People consider all Asian food as hot and spicy. This is not true. Hot and spicy do not mean the same thing. Hot comes from chillies but spices come from herbs. Indian/South Asian foods make a greater use of spices than chillies. And herbal food is the healthiest food one can eat.

This book contains recipes from Bangladesh and Eastern Bengal in Central India. It contains a list of herbs used in south Asia. Similar herbs, such as garlic, onion, parsley and coriander, etc, are grown in Ireland and Europe. Onion and garlic are the key ingredients of Indian food.

There are hundreds of different types of Indian dishes. Only a few of these appear in this book. The next book will introduce you to more dishes, snacks and desserts.

Please make sure you are not allergic to any of the herbs/spices contained within the ingredients of the various dishes.

This book is an inspiration to try something new after my appearance on Irish national radio back in 2002.

Having thought and researched the topic “why are people afraid of spicy food”, I have found something I think we all agree on – herbal food is one of the healthiest types of food that we can eat. This is why I’m very particular about herbs and spices, and have been growing many in my own garden since completing my horticulture course (FETAC).

This book has some of the most popular Indian recipes, in which I’ve mentioned some herbs used in European cooking, as an alternative to the Indian herbs and spices.
